Carbone Style Spicy Rigatoni Vodka

 Dairy-free Gigi Hadid / Carbone Style Spicy Rigatoni Vodka


Recipe:


2 tablespoons olive oil
1 shallot or small onion finely chopped
2 garlic cloves, finely diced
1-3 teaspoons red pepper flakes (depending on spice preference)
1/4 cup tomato paste
1/4 cup vodka or water
1/2 cup - 2/3 cup full-fat canned coconut milk - use the thick hardened cream on top of chilled/ unshaken can (different brands do taste different I like whole foods 365 brands) 
OR 1/2 cup soaked cashews * see alt directions below
Salt and pepper to taste.
1/4+ cup reserved pasta water
2-3 cups rigatoni pasta, I used chickpea for GF (cooked al dente in heavily salted water)

Instructions:


Sautee shallot and garlic in olive oil until soft and golden. Add in the red pepper and cook for 30 seconds until fragrant. 
Add in tomato paste cook down for a few minutes until darker in color and slightly caramelized. 

Add in vodka or water and mix. Stir in coconut milk cream and cook until thickened slightly. 

Add salt and pepper to taste. 
Remove sauce from heat. 

Cook pasta in heavily salted water (al dente because it will cook a bit more in the sauce). 

Once cooked add pasta to your sauce and slowly pour in 1/4 cup reserved pasta water as you stir it together with the sauce. 

Simmer about a minute longer. Top with fresh chopped basil and more red pepper flakes. Enjoy!

Cashew instructions: 


boil cashews for 10 minutes or soak overnight. Add cooked tomato mixture + cashews + 1/4 cup reserved pasta water to a high powered blender and blend until creamy. Depending on your blender, you may need to add more water for it to blend properly - just be mindful as doing so will dilute flavors.
